What to cook this week?

Whatever fills your calendar this week, your dinner time is about to get easy! Below, you can find a meal idea for each day of the week, all easy, made from scratch with simple ingredients. Because this is how we cook here! I’m starting with a quick dinner recipe that cooks in one skillet. There is a salmon recipe that you simply have to try. The Parmesan topping is absolutely delicious!

I am making my go-to Instant Pot dinner – the best spaghetti ever! Finally, my dessert suggestion is bright in color and flavors! My easy and soft Raspberry Cake with Sweet Glaze is perfect to enjoy with friends alongside a cup of tea or coffee. Enjoy!

Monday

This Egg Roll in a Bowl is a simple, veggie-packed dinner that cooks in one skillet.

Tuesday

This Air Fryer Salmon is a game-changer! Quick, easy, and topped with a crunchy Parmesan layer. So good!

Wednesday

This budget-friendly dinner is basic but a must for any home cook! Skillet Chicken Thighs are flavorful and juicy!

Cooked chicken thighs on a white plate.

Thursday

I make this Instant Pot Spaghetti almost every week! It’s so flavorful because the pasta cooks in the sauce, all in the pressure cooker. Winner!

Friday

One of my go-to Spring pasta meals is this Garlic Butter Mushroom Shrimp Pasta. Talk about fast and easy!

Saturday

If your Saturday is full of running errands or you are enjoying a slow weekend, this One-Pot Chicken and Rice will fit perfectly into your schedule.

Sunday

Finishing this week is my recipe for easy Baked Pork Chops, served with my favorite mashed potatoes. Slow down and enjoy every bite!

Baked pork chop on mashed potatoes with asparagus on a side, all on a plate with brown rim.

Bonus – dessert!

If you need a reason to turn on your oven, this Raspberry Cake might just be the answer! I skipped the classic frosting and made a quick, sweet glaze to drizzle over each piece. Gorgeous!
