These kinds of recipes always win in my book. Whether I want to make breakfast just for us or a holiday breakfast for the guests, I can easily make these egg cups in no time. Plus, there is only a muffin pan to clean up!

Ingredients:

  • eggs: I find that large eggs are perfect for this dish. They fit nicely in a regular muffin pan. If you are using small eggs, consider adding more cheese or sauteed veggies at the bottom.
  • ham: I used honey ham, deli sliced. I used 2 slices per cup. If your ham slices are thicker, one might be enough for each cup.
  • cheese: I used a blend of cheddar and Pepper Jack, shredded fresh.

  • Place two slices of deli ham in each muffin cup.
  • Divide the shredded cheese among all ham cups.

Helpful Tips!

  • If you are using a thin-sliced deli ham, use two slices per egg cup. It gives them enough structure to hold the baked egg.
  • Add more baking time as needed to achieve the desired level of egg doneness.
  • Add sautéed onions, garlic, bell peppers, mushrooms, etc., to the cheese layer.

  • 1 muffin pan
  • 1 box grater if grating the cheese

Ingredients

  • 12 deli slice ham see notes
  • 6 large eggs
  • 2 oz cheddar cheese grated

Instructions

  • Preheat oven to 400℉.
  • Place ham in each muffin cup.
    12 deli slice ham
  • Divide the cheese evenly among all ham cups.
    2 oz cheddar cheese
  • Gently break an egg into each ham cup. See notes.
    6 large eggs
  • Bake egg cups for 13 to 15 minutes, depending on how done you like the eggs.
  • Garnish with salt, pepper, chopped parsley or chives.

Notes

  • Large eggs are best for this dish. They fit nicely in a regular muffin pan.
  • I used honey ham, deli sliced. I used 2 slices per cup. If your ham slices are thicker, one might be enough for each cup.
  • It is helpful to break the egg into a small bowl and then pour it into ham cups. This way, if you have a broken shell piece in the egg, you can easily remove it.
